Top-setting onions

As perennial onions, Egyptian walking onions grow through winter and come back year after year. In late winter, bulblets are starting to form on a patch of Egyptian walking onions.

What are topsetting winter multiplier onions?

These perennial heirloom onions, also called "tree onions" or "walking onions" form clusters of very small bulblets or sets on the tips of the leafstalks. An established plant resembles a clump of green scallions.

What are the bulbs on top of onions?

A bulb on the top center stalk of your onion means it has begun the process of flowering and making seeds. This is called “bolting,” which is terrible news for onion growers.

What do Egyptian walking onions taste like?

Egyptian Walking Onions taste like a spicy onion. The hollow greens can be chopped up and eaten like chives or green onions. The bulbs can be fried, cooked in soups, eaten raw in a salad, or pickled.

Should I let my onion sets flower?

Unless you wish to save the seeds for use next season, cut the flowers off any onions that have bolted. This won't reverse the bolting process but it does stop the bulb from dividing. Bolted onions are perfectly edible and although they'll last for a month or so in the ground, they won't store.

Will walking onions multiply?

They can be separated but will grow as a clump very well. They don't need to be replanted as the similar multiplier onions do. They also multiply from the base, so established clumps can be divided as well. This is best done in spring.

Do multiplier onions come back every year?

Multiplier onion sets (aka potato onions) produce abundant offsets from each bulb planted. Sow these first-year onion sets in the spring and enjoy cut-and-come-again green onions all summer long. By the fall, each set that you planted will have produced lots of offsets that are the perfect size for pickling onions.

Are bunching onions the same as multiplier onions?

The green sprout grows from the root of the onion, up through the middle and out the top. The best way to salvage the onion is to cut it open, pull out the entire green shoot and roots, and use the rest. If you want to regrow the green shoot, see the instructions below before cutting.

If you find an onion with the long greens still attached (mostly in spring), don't throw those greens away! They have a lovely mild onion flavor and you can use them just as you would use a scallion. Will onions regrow if left in the ground?

If you leave a mature onion in the ground over the winter instead of harvesting it as recommended, the mature onion will begin to multiply. The onion that is left in the ground will begin to form sections, much like a garlic clove. Those sections can then be separated and planted as sets each spring.
